Zaalouk Inspired Tomato Sauce

Zaalouk Inspired Tomato Sauce

Ingredients

- 4 tbsp olive oil
- 3 cloves of garlic (finely chopped)
- 1 cup cherry tomatoes (finely chopped)
- 3 Roma tomatoes
- 1 tbsp tomato puree
- 1 tsp ground cumin
- 1 tsp paprika powder
- ½ tsp Sumac
- ½ tsp chili flakes
- 1 tsp sugar
- salt to taste
- a small handful of coriander or parsley (finely chopped)
- 4 slices of Halloumi
- half of an avocado slices
- 2 sourdough buns or flatbread

Instructions

1. Cut up your tomatoes and garlic. Then add olive oil to a pan add your tomatoes. Cook them on medium heat for 3-4 minutes before you add the spices, tomato paste and garlic. Stir well and lower the heat. Let the sauce simmer for another 5-7 minutes.

2. In the meantime toast your buns in some olive oil. Remove the buns from the pan and add some more olive oil. Fry your Halloumi slices until they are golden brown and crispy. Remove the slices from the pan and set this aside.

3. When the tomato sauce has cooked down, add some fresh coriander or parsley and stir well. Turn of the heat. 

4. Prepare your buns and see how I did on my REEL!

TIPS:
- Add chickpeas, peppers or eggplant to this sauce and eat it with Flatbread, Basmati Rice or Bulgur.
- Make some holes in the sauce and add some eggs. Put the lid back on and you have some Shakshouka!
