Vegetarian Bratwursts w/ Smashed Avocados and Sautéed Mushrooms

Give these vegetarian Bratwursts a try. They are very meaty, succulent and super flavourful!
There are many types of Bratwursts (a German type of sausage which is mostly made from pork, veal or beef) but since I only eat chicken, duck, lamb and fish I also like to try out vegetarian options too. However, I’m not always that exciting in trying out vegetarian “meats”. Sometimes I tend to find them a bit dry, bland or too salty to eat on its own. At those times I’d rather eat my curried veggies, stuffed aloo (potato) samosa’s or my Indian Fried Rice as a meatless dinner. When I tried out these vegetarian Bratwursts from "De Vegetarische Slager" (not sponsored), I was really surprised and happy with them. They are very meaty, succulent and the flavours are well balanced!

The spiralized red carrots add colour and sweetness! Plus they look a bit like red onions too.
But like I said a few blogs before, I always want more. What inspired me to add more - then just some sausages and mustard on a bun - were all the lovely smashed avocado with sautéed mushrooms on toasts which I see everyday on my Instagram feed! I love the combination of the smashed avocado and earthy mushroom. So as I was rummaging through my fridge I also noticed some red carrots which I bought at the Hague Market. The main reason why I used these carrots was because I happen to have them around and I was dying to use my spiralizer. But! The carrots do add a certain sweetness and complement the earthy flavours of the sautéed mushrooms. So if you happen to have them around do use them!
I guess most of us can relate to one of these ingredients so feel free to use one or two toppings or swap ingredients to make it a vegan/meat version. The beauty of recipes like these are that they can cater a lot of people. And I guess the best way to do that is serve each topping on its own and let your family, friends or guests make their own Bratwursts baguettes!

Vegetarian Bratwursts w/ Smashed Avocados and Sautéed Mushrooms

Ingredients
Note: this recipe makes 2 mini baguettes. Please double the quantities for more.
- 2 small smashed avocado’s (seasoned with a bit of salt, lemon juice, garlic and chili powder)
- 2 spiralized red carrots (seasoned with a little bit of olive oil, salt and pepper. You can also use regular orange carrots. If you don’t have a spiralling device finally cut them into strips)
- 6 chestnut mushrooms (chopped and sautéed in a pan with a little bit of olive oil)
- 1 package of vegetarian bratwursts (I’ve used the Bratwursts from "De Vegetarische Slager". 1 package has 3 Bratwursts)
- 2 multigrain baguettes or regular buns
- salt & pepper to taste
- a few coriander or parsley leaves
Instructions
- Smash 2 avocados and flatten them out on a plate. Season the smashed avocados with a pinch of salt, garlic, chili (optional) powder and a squeeze of lemon juice. This way you are seasoning the entire surface. Mix well and store the avocado paste in the fridge.
- Spiralize or finely cut the carrots in strips if you don’t have a spiralling device. Season it with a little bit of olive oil and salt & pepper. Set this aside.
- Cut the mushrooms in half and cut each half in 3 or 4 pieces depending on the size. Sauté them in a little bit of olive oil on medium to high heat. This will take about 3 to 4 minutes until they are cooked and browned.
- In the meantime cook your vegetarian Bratwursts according to the package instructions. When they are cooked let them sit on some kitchen towel paper.
- Assemble your baguettes (you can toast them first if you like) by spreading a royal amount of smashed avocado, top it with one bratwurst, the mushrooms and carrots. Garnish with some coriander or parsley leaves. Enjoy!
