Toast w/ Blistered Tomatoes & Cottage Cheese

Ingredients

NOTE: this toast serves 1 person

- 1 slice of sourdough bread, I used multigrain from Vlaamsch Broodhuys.
- 1 tbsp olive oil
- handful of cherry tomatoes
- 1 tsp of garlic (minced)
- 2 tbsp of cottage cheese
- 1 tbsp of green pesto
- Parmesan shavings
- salt & pepper to taste

Instructions

  1. Brush both sides of your toast with olive oil and toast it in the pan. It should be crispy. Remove after and set this aside.

  2. In the same pan add 1 tbsp of olive, 1 tsp of garlic (minced) and your cherry tomatoes and cook the tomatoes on high heat until they are slightly soft and blistered. This takes about 5 minutes.

  3. Assemble your toast and spread some cottage cheese on top followed by the tomatoes, a drizzle of pesto and sprinkle of Parmesan shavings. Season with salt & pepper to taste and eat immediately!
