Toast w/ Blistered Tomatoes & Cottage Cheese

NOTE: this toast serves 1 person
- 1 slice of sourdough bread, I used multigrain from Vlaamsch Broodhuys.
- 1 tbsp olive oil
- handful of cherry tomatoes
- 1 tsp of garlic (minced)
- 2 tbsp of cottage cheese
- 1 tbsp of green pesto
- Parmesan shavings
- salt & pepper to taste
Instructions
- Brush both sides of your toast with olive oil and toast it in the pan. It should be crispy. Remove after and set this aside.
- In the same pan add 1 tbsp of olive, 1 tsp of garlic (minced) and your cherry tomatoes and cook the tomatoes on high heat until they are slightly soft and blistered. This takes about 5 minutes.
- Assemble your toast and spread some cottage cheese on top followed by the tomatoes, a drizzle of pesto and sprinkle of Parmesan shavings. Season with salt & pepper to taste and eat immediately!
