Sweet Potato & Garlic Galette

Ingredients
NOTE: This recipes serves 2 or 3 persons.
- 1 large sweet potato
- 2 tbsp olive oil
- 1 tbsp butter + 1 tbsp olive oil
- 2 tbsp Parmersan cheese (grated)
- ½ tsp garlic powder
- salt & pepper to taste
For garnish:
- parsley (finely chopped)
Instructions
- Preheat your oven to 200C or 400F.
- Wash, peel and thinly slice your sweet potato.
- Layer the slices in a round oven-dish (20-25 cm) lined with parchment paper.
- Drizzle 2 tbsp of olive oil over the galette followed by a sprinkle of salt & pepper.
- Cover the galette with thin foil and bake for 15-20 minutes (depending on your oven).
- After 15-20 minutes remove the thin foil and pour a mixture of 1 tbsp of melted butter, 1 tbsp olive oil, garlic powder and Parmesan cheese over the galette. Place it back in the oven for and extra 5-7 minutes until the sweet potato slices are cooked through and have a nice golden brown colour.
- Finely sprinkle some fresh parsley for garnish and serve immediately!
