Spicy Breakfast/Lunch Taco

Breakfast heaven!
For this meal, I basically used what was left in my fridge, freezer and pantry. You can easily substitute the vegetables, veganize this meal or even add sausages to make it a meatier breakfast/lunch taco. Whichever way you choose, it will be one of the best things you’ll ever eat!

Spicy Breakfast/Lunch Taco

Vegetables
Ingredients
NOTE: One person recipe. Double the quantities for more portions.
- 1 small white potato (in cubes)
- 1 small shallot (finely chopped)
- 1 garlic clove (minced)
- 1 or 2 mushrooms
- 1 or 2 tbsps of red & green pepper
- 1 or 2 babycorns
- 1 ½ tbsp black beans
- 3 tbsp olive olive oil
- 1 tortilla sheet
- 1 fried egg
- dash of Pimenton (smoked pepper powder)
- salt and pepper to taste
For garnish:
- hot sauce
- parsley
- cheddar cheese or queso fresco / feta (optional)
Instructions
- Prepare all your ingredients by chopping, slicing and mincing them.
- Then fry your potato cubes in 1 tbsp of olive oil until they are golden brown and almost cooked. Add the chopped onions and minced garlic. Let it cook for a few minutes before you add the chopped baby corn and a dash of Pimenton. The mixture will become a bit dry so add ½ tbsp of olive oil. This is optional. Then finely add the vegetables (peppers, mushroom and black beans). Cook the whole lot until the potatoes are done. The vegetables should remain their crunch. Add salt & pepper to taste.
- Heat up a tortilla sheet (I like mine a bit crispy) in a pan. In the meantime fry an egg in 1 ½ tbsp olive or regular oil. You can keep the yolk runny as this will also act as a sauce for your filling but if you prefer a cooked yolk that’s also fine. Season your egg with salt & pepper.
- Assemble your breakfast/lunch taco by placing the potato and vegetables mixture on top of the tortilla, then add the egg and finish it off with some hot sauce and parsley.
TIPS:
- If you want to veganize this meal, add more or a variety of mushrooms, a firm tofu (I suggest you fry this first) or even more crunchy veggies (steamed broccoli, asparagus or even peas).
- If you want to host a breakfast bar, parboil the potatoes first and then fry them until they become golden brown.
