Salad with Grilled Corn, Creamy Guacamole & Holy Guacamole Dressing

Salad with Grilled Corn, Creamy Guacamole & Holy Guacamole Dressing

Vegetables
Ingredients
- 2-3 tablespoons of Creamy Guacamole
- 1 package of mixed lettuce
- 1 corn, grilled in the pan with 1 tbsp olive oil
- 65 g red cabbage, thinly sliced
- ¼ red onion, thinly sliced)
- 5-6 pieces of mini cucumber, thinly sliced
For dressing:
- 3 tbsp olive oil
- 1 tsp lemon juice
- 1 tsp Holy Guacamole herbs
For garnish:
- cress, optional
- feta, crumbled
Instructions
- Brush the corn with olive oil and fry or grill in a pan for 5-10 minutes over medium to low heat. Allow the corn to cool and then cut the corn off the cob and set it aside.
- Then finely chop the onions, cucumber and red cabbage and place them in a salad bowl. Add the lettuce and corn.
- Mix the olive oil, lemon juice and Holy Guacamole herbs into a nice dressing and pour half of the dressing over the lettuce. Mix this well.
- Spread the Creamy Guacamole on a plate and place the lettuce on top.
- Garnish with cress and feta.
TIP:
- Serve this salad with fried potatoes or meat/fish for a meal salad.
