When I came up with this recipe my dear friend Rose was wandering in my mind. She is madly in love with all these “rose” and potpourri flavours. This delish Rose-dish however isn’t anything like your scented sachets lying on top of one of those glass shelves in a bathroom. Don’t worry, nothing about it will remind you of those, because the yoghurt itself is flavoured with a vanilla pod and a light drizzle of rose water. These flavours go hand in hand with the twang of the Greek yoghurt and make for a perfectly subtle mess.

The warmed cherries on top are a real treat. I made this yoghurt when it was cherry season, but feel free to use frozen ones if they are out of season. Or even substitute the cherries for other berries. 

This Rose Yoghurt with Warmed Cherries is absolutely finger-licking. You can have it for breakfast, as a dessert or even layer it parfait style in tall glasses. Whichever way you’ll have it, I promise you’ll enjoy it! 

Rose Yoghurt w/ Warmed Cherries

Ingredients

For the Rose Yoghurt:
- 1 cup + 2 tbsp of vanilla yoghurt/plant based brand (you can make your own vanilla yoghurt by adding a little bit of vanilla bean paste)
- ¼ tsp rosewater
- ½ cup of cherries (deseeded and leave whole)
- 1 tbsp of honey (if you’re vegan, substitute for maple or date syrup)
- ½ tbsp of water

For garnish:
- natural granola
- pistachio slivers
- fresh/frozen cherries
- white flowers (optional)
- 1 tsp of honey - dried rose petals (optional)

Instructions

  1. Prepare your yoghurt by adding vanilla bean paste and rose water to it. Mix well and store it in the fridge until you have the other ingredients sorted (10 to 15 minutes).

  2. Place the cherries in a pan, add the honey, and let the cherries cook for 3 minutes until they are warm and the syrup is thick.

  3. Let the cherries cool down a bit before you place them on the cold yoghurt. Garnish with some granola, pistachio slivers, fresh/frozen cherries, white flowers and dried rose petals (both optional) and finally drizzle with some honey.

    TIP: Not a yoghurt person? Well, you can easily substitute the yoghurt for overnight oats. For a vegan version you can use a plant based “yoghurt” brand and skip the honey and drizzle some maple or even a date syrup. Enjoy!
