Potato Latkes w/ Sour Cream, Smoked Salmon & Avocado

Ingredients

NOTE: This recipe makes 6 big latkes or 12 small ones.- 2 yellow potatoes (medium size)- 1 white onion (medium size)- 2 tbsp AP flour- 1 egg (medium size)- salt & pepper to taste- 2-4 tbsp oil for fryingFor the sour cream sauce:- 2 tbsp sour cream + 3 tbsp cream cheese- ½ tsp garlic powder- salt and pepper to tasteFor the toppings:- 1 batch of sour cream sauce (see above)- smoked salmon- avocado- chives- pickled onions

Instructions

  1. Grate the onion and potato. Then queeze out the excess moisture and place the lot in a bowl.

  2. Add the flour, egg and seasoning to the bowl and mix well.

  3. Divide the mixture into the desired quantities and fry in two or four batches. I did this in a bit of oil on some medium heat and it took me about 8-10 minutes*N.B: Let the Latke fry undisturbed for 3-5 minutes on medium heat before you flip them over and continue to cook further.

  4. When the Latke is cooked, remove them from the pan and place them on some kitchen towel paper. Serve the Potato Latkes with some sour cream sauce and my toppings and enjoy!
