Pesto for 1 or 2 person

Creamy dreamy Pesto from me to you!
I like my pesto cheesy. Simply because I love cheese. Therefore, I use a lot more cheese than an authentic pesto recipe would use. I also like to add a lot of garlic in mine. For a one person pesto recipe, I use one big red garlic clove. I prefer to use red garlic as it has a more peppery flavour and a stronger smell.
My pesto recipe is actually a lot of pesto for one person. I think two people can eat from this serving, depending on how much pesto you like in your pasta. I like a lot of pesto in my pasta!

To make a sauce I simply combine about 2 or 3 tbsp of pasta with my pesto. You’ll notice that this starchy water will make a velvety pastel green sauce. If you eat this pesto pasta with my Oven-Baked Salmon Meatballs, grilled chicken or fish you would want to have more sauce so the meat is fully coated too. Try it out and let me know what you think!
Pesto for 1 or 2 person

Ingredients
- 3 tbsp oil
- 10 gr toasted pine nuts (I toasted them slightly in a pan)
- 2 or 3 tbsp of Parmigiano Reggiano (grated, I like my pesto creamy and cheesy)
- a good handful of basil leaves
- 1½ garlic clove (use less if you like) or 1 ½ tsp garlic powder
- salt & pepper to taste
Instructions
Prepare the pesto by slightly toasting your pine nuts in a pan. Let them cool off. Then put all the ingredients in a food processor until you get a fine paste.
You can store this pesto up to a week in your fridge if it even lasts that long.. If you decide to make a big batch then I suggest you freeze your pesto. I always do that so I can have some comfort food (pesto pasta) in minutes.
TIP: Mix two tbsps of mayonnaise with 1 tbsp of pesto and use this condiment as a smear for your chicken or cheese sandwich.
