Pearl Couscous Salad w/ Broccoli & Chickpeas (Vegetarian)

NOTE: This salad serves 2-3 persons.

- half of broccoli head (remove the florets and make sure they are the same size)
- 130 gr of canned chickpeas
- 75 gr of Pearl Couscous (cooked according to the package instructions)
- 225 gr or one package of Halloumi (seasoned with ½ tsp onion and garlic powder and 1 tbsp olive oil)
- 2 tbsp olive oil
- 1 tsp of garlic paste or 1 clove of garlic (minced)
- 1 tsp coriander powder
- 1 tsp bouillon powder (chicken or vegetables)
- 1 tsp of black pepper
- handful of fresh coriander or parsley leaves


  1. Cook the Pearl Couscous according to the package instructions and set this aside. You can drizzle a little bit of oil to prevent it from sticking.

  2. Cut the Halloumi into rectangles and season them with 1 tbsp olive oil and some garlic + onion powder and black peper. Fry these in a pan on medium heat until both sides are crispy. This takes about 5-7 minutes.

  3. In a pan add tbsp olive oil and the dry spices, garlic paste, bouillon powder and black pepper. After 2 minutes add your broccoli and chickpeas. Cook the lot on medium heat and turn the heat to low after 2-3 minutes. Cover the pan with a lid and let it steam for 2-3 minutes.

  4. Then add your seasoned vegetables to your Pearl Couscous. Mix well and garnish with the Halloumi and fresh coriander.
