Oven-Baked Carrot Fries

Crispy, delicious Carrot Fries - defo worth to try!
These colourful carrot fries are tossed in some olive oil, Pimenton, garlic powder, chili powder and grated Parmesan cheese. The Pimenton gives these fries a smoky flavour and the Parmesan cheese gives it that extra crunch.
Carrot Fries are also great way to enjoy carrots and even picky eaters will love this recipe. If you make it for your child then leave out the chili powder. You can serve these fries with my delicious pesto mayo or a healthier dip such a yoghurt, tahin and sumac. Either way, enjoy these Carrot Fries and make lot!

Ingredients
NOTE: This recipe serves one person. Double the quantities for more portions.
- 3 carrots cut into matchsticks
- 1 tbsp of olive oil
- ¼ tsp garlic powder
- ¼ tsp Pimenton (smoked pepper powder)
- ⅛ tsp chili powder
- 2 tbsp grated Parmesan cheese (optional, leave out if vegan)
- salt & pepper to taste
For the pesto mayo:
- 2 or 3 tbsp mayo
- 1 tbsp pesto
Instructions
- Preheat your oven to 190 C or 375 F.
- Cut the carrots into matchsticks or fries.
- In a bowl mix the olive oil, garlic powder, Pimenton, Parmesan cheese and salt and pepper. Add the carrot fries and mix well.
- Place the carrot fries on some parchment paper and bake them for 15-20 minutes (depending on the heat of your oven). In the meantime prepare your pesto mayo. Serve with pesto mayo (or any other condiment) and enjoy!
