Oven-baked / Airfryer Chicken Nuggets

Ingredients

NOTE: This recipe makes about 14-16 chicken nuggets.
- 2 chicken breast (minced)
- ¼ cup grated carrots (instead of sugar)
- 1 of 2 takjes peterselie
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp chicken bouillon powder / seasoning (I used Maggi, chicken flavor) 
- pepper to taste 

For the coating:
- 1 cup cornstarch

- 1 egg
- 1 cup flour
- 1 cup water
- 1 tbsp paprika powder
- 1 tbsp chicken bouillon powder or salt
- 1 tsp pepper

- 1 cup breadcrumbs / Panko

- oil/butter for coating/spraying 

Instructions

 

  1. Preheat your oven / Airfryer on 190 C / 374 F.

  2. Cut the chicken in cubes and ground it roughly in a in a food processor. Then add the carrots, egg, spices, and parsley and ground it until you have a fine paste.

  3. Remove the chicken mixture and place it in a bowl. Add some oil on your hands and form the paste into chicken nuggets. Make sure they are the same size and about a 1 cm thick.

  4. Then dredge the chicken nuggets in some cornstarch until fully coated and set them aside. Meanwhile mix the egg, flour, water and spices until you have a “pancake batter paste” which is also smooth.

  5. Dip the chicken nuggets in the mixture* and coat them with the Panko breadcrumbs.

    N.B. If you want to be cheeky you can also fry them in a bit of oil and you don’t have to coat them with the Panko breadcrumbs.

  6. If possible, place all the chicken nuggets on a oven tray lined with a baking sheet or place about 7-8 chicken nuggets in an Airfryer (I also place some baking sheet in there). Spray / brush with a bit of (sunflower) oil and bake them for 7 minutes on 190 C / 374 F.

  7. After 7 minutes turn them around and spray / brush once more with a bit of oil. Bake them for another 5-7 minutes until they are cooked and golden brown. Serve immediately with ketchup, mayonnaise, or Ranch sauce.

    TIP:
    - You can also vary with the vegetables and add cauliflower, broccoli, or any hard vegetable. Make sure you grind it first before you add it to the mince.
