Onion & Mussels Bhaji's

Ingredients
NOTE: this recipe makes 8 pieces.
- 1 large white (sweet) onion (finely chopped)
- 100 gr Zeeland hanging culture mussels (pre-cook yourself, see below for instructions)
- ¾ cup chickpea flour
- ½ tsp baking powder
- ½ tsp cumin powder
- ½ tsp turmeric powder
- ½ tsp garlic powder
- ½ tsp garam masala (optional)
- ½ tsp chili powder (optional)
- 2 tbsp fresh coriander (optional, finely chopped and can be replaced with parsley)
- 1 tsp lemon juice
- 8 tbsp water
- salt & pepper to taste
- Oil for frying
For the yogurt sauce:
- 4-5 tbsp yogurt
- 1 tbsp lemon juice
- fresh cilantro (optional, finely chopped and can be replaced with parsley)
- salt & pepper to taste
Instructions
How to pre-boil/cook your mussels?
N.B: I'm going for 1 kilo of mussels. This amount is good for 1 person.
1. Rinse 1 kilo of mussels in cold water and throw away the broken mussels or the mussels that do not close when tapped.
2. Put 1 tbsp olive oil + 1 tbsp butter together with 1 sliced garlic clove and a chopped onion (or mussel vegetables) in a pan and fry over medium heat until they are glassy.
3. Place the mussels in a pan, give them a shake. At this point, you can deglaze the mussels with a splash of white wine or stock or let them braise with the lid on the pan for 8-10 minutes (until all shells are open) over a medium heat.
4. When the mussels are open you can serve them with some tasty dipping sauces, fries or a salad or you can make these Onion Mussels Bhajis (see below)!
Onion Mussels Bhajis
1. Finely slice the onions into half rings. Then add all ingredients and mix well.
N.B: if you don't want to break up the mussels, you can add them at the end.
2. With your hands or two spoons make some flat cookies (press well) and fry them in some oil until they are golden brown and crispy.
3. Serve the Onion Mussels Bhajis with the yogurt sauce and some ketchup. Eat them immediately, because that's when they taste the best!
TIPS:
- Not a fan of mussels? Add shrimp or pieces of white fish
- Veganize this dish by omitting the mussels or replacing them with a plantbased fish.
