The sushi sandwich is packed with veggies and of course pulled jackfruit which is cooked in Sambal Oelek from Spice it! This gives the sandwich a fusion touch but the spices in the sambal oelek work so well with the sushi rice, veggies and mayo/soy sauce. Make them soon, bring them to work or have these Onigirazu at a picknick!

Onigirazu (Sushi Sandwich) w/ Jackfruit & Sambal Oelek (Vegetarian)

Ingredients

For the filling:
- 190 gr sushi rice
- 110 gr canned jackfruit
- ¼ white onion (finely chopped)
- 1 tbsp Sambal Oelek (Spice It)
- ½ tbsp soy sauce
- ½ clove of garlic
- 1 tbsp honey
- 1 tbsp oil
- salt & pepper to taste

For the Onigirazu:
- 2 sheets of nori
- spinach leaves
- red cabbage (finely sliced)
- spring onions (finely sliced)
- black sesame seeds

For the sauce:
- 3 tbsp (vegan) mayonnaise
- 1 tsp Sambal Oelek
- squeeze of lemon juice

Instructions

  1. Cook the sushi rice according to the package instructions. Let the rice cool off before using it in the sandwiches.

  2. Meanwhile, remove the jackfruit pieces from the can and squeeze out the liquid. Then pull the flesh apart (with your hands or two forks), so that it gets a “pulled chicken” texture.

  3. Chop ¼ onion and finely chop ½ clove of garlic. Cook these for a few minutes on medium heat in a frying pan with a dash of oil. After 2-3 minutes, add the jackfruit. Cook the mixture for about 5-8 minutes and stir every now and then so the jackfruit becomes a bit crispy. Then add 1 tbsp sambal oelek, ½ tbsp soy sauce and 1 tbsp honey. Stir well and after 3-5 minutes remove the jackfruit from the pan, so it can cool off as well.

  4. Finely chop some red cabbage and spring onions. Take a piece of cling film and place it on a board or large plate. Then place a nori sheet on the cling film. Divide the sushi rice into 4 portions. Make a square of each portion and place 1 square in the center of the nori sheet. Make sure it is turned half. So, the square with sushi rice has the shape of a diamond.

  5. Top the diamond-shaped sushi rice first with the jackfruit mixture and then with thin layers of vegetables (spinach, red cabbage and spring onion). Place a second square of sushi rice on top and press it down well.

  6. Then fold the nori sheet inwards so that the dots meet, and the rice package is wrapped. Fold the cling film tightly around the sandwich. Let the Sushi Sandwich stand for a few minutes. This will soften the nori sheet and make it easier to cut in half.

  7. Meanwhile, prepare the spicy mayonnaise by mixing 3 tbsp mayonnaise, 1 tsp sambal oelek and a squeeze of lemon juice.

  8. Garnish the Sushi Sandwiches with sesame seeds and some extra finely chopped spring onions. Serve with sambal oelek mayonnaise, soy sauce or Japanese mayonnaise.
