Nachos w/ Red Curry Chicken Mince

Fiesta or no fiesta, these are great any time of the day! Yes, even in the morning ;-)
If you’re having a fiesta or just want a quick and tasty meal, then these nachos will not disappoint! The chicken mince is seasoned with a delicious and fragrant Thai red curry paste and cooked until crispy. Then we heat up the nachos and load it with the mandatory Mexican ingredients such as, corn, black beans, queso fresco (white cheese), tomato, avocado and sour cream. For color I add some red cabbage and sprouts, but this is optional. I was really happy with these flavors and hope you too.

Nachos w/ Red Curry Chicken Mince

Ingredients
NOTE: this dish is good for 2 or 3 people
- 300 gr chicken (vegan) minced meat
- 2 tbsp of olive oil
- 1 ½ tbsp of red curry paste (So Thai or any other brand. Also, first taste the paste and use the desired amount)
- salt & pepper to taste
For the Nachos:
- 1 bag of nachos (regular) or fried/baked tortilla sheets
- 300 gr red curry mince (see above for ingredients)
- 100 gr of cheddar cheese
- 100 gr of white cheese
- 100 gr corn (fresh or canned)
- 100 gr black beans (canned)
- ½ red onion (chopped)
- 1 avocado (cut into cubes)
- 1 tomato (cut into cubes)
- 1 spring onion (finely chopped)
- red cabbage (finely chopped, optional)
- fresh cilantro (optional)
- 100 ml sour cream or a vegan substitute
- avocado sauce (optional)
- sprouts (optional)
Instructions
- Mix the curry paste with the minced meat. Then in a non-stick pan, heat 2 tbsp olive oil and cook the mince on medium heat until it’s done (about 15-20 minutes).
- Meanwhile, cut all the vegetables, drain the corn + black beans and set this aside.
- Put the nachos chips in oven dish (covered with a baking sheet). Top this with the cooked red curry chicken mince, followed by the corn, black beans, red onion and cheese. Bake in a preheated oven at 200 C / 392 F for 5-7 minutes until the cheese has melted.
- When the cheese has melted, remove the dish from the oven and finish the nachos with the rest of the toppings (tomato, avocado, red cabbage, fresh cilantro and sour cream). Serve immediately and enjoy!
TIPS:
- Add some chili sauce to your sour cream for a sweet & spicy dip!
- This red curry mince is also delicious in a taco shell or in a rice bowl (serve with a scoop of Pandan rice and all the desired toppings).
- Let your guest built their own nachos and serve everything separately! This is also a great kids-proof meal.
