Easy and delicious!

I did add a few twists, because I didn’t have all their ingredients at home, but instead I used my old stale bread, added some Halloumi, cucumber and enjoyed this Summery salad in all its beauty!

Middle Eastern Salad

Ingredients

- 1 ½ cup stale/old bread (multi grain, shred into pieces)
- 1 tbsp Sumac
- 1 tbsp Za’atar
- handful of cherry tomatoes (cut in half)
- half of cucumber (sliced)
- handful of walnuts
- 1 shallot (finely sliced)
- lettuce leaves
- Halloumi
- 6 tbsp oil
- salt & pepper to taste

Instructions

1. Fry your walnuts and bread golden brown in 2 tbsp oil and on medium heat. Season with Sumac, salt & pepper, mix well and remove from the pan.

2. Then slice your Halloumi and fry in the same pan with 2 tbsp olive oil until both sides are golden brown. This takes about 10 minutes on medium heat. Remove from the pan.

3. Toss your sliced cherry tomatoes, cucumber, shallot in a bowl and season with 2 tbsp olive oil, Zaatar and add salt & pepper to taste. Finally mix the lettuce leaves in.

N.B. You can also add the Halloumi and fried bread + walnuts in the bowl but I like my bread crunchy, so I topped it on my salad.

4. Serve the salad mixture on a plate, place the Halloumi in the salad and sprinkle the bread + walnut on top. Serve immediately!
