Marinated Strawberries w/ Basil & Mascarpone Cream

Ingredients
NOTE: This recipe is good for two persons.
- 200 g strawberries (sliced)
- 125 gr mascarpone (I used Galbani and stored it in the fridge)
- 100 ml whipped cream
- 3 tbsp icing sugar
- half of vanilla pod (seed scraped out)
- ½ cup sugar (I used light brown sugar)
- ½ cup water
- 4-5 basil leaves (finely chopped)
Instructions
- Place the sugar and water in a saucepan and slowly bring to the boil. Stir gently to dissolve the sugar and let the syrup bubble gently for 5 minutes. Then remove the pan from the heat.
- Meanwhile, cut the strawberries into slices and the basil into thin strips. Add a few tablespoons of syrup to taste and mix well.
- Then mix the whipped cream, mascarpone, icing sugar and vanilla seed in a bowl with a whisk until it is a nice smooth mass and let it set in the fridge for 10 minutes.
- After 10 minutes, divide the mascarpone cream between two deep bowls and top with the strawberries and basil in syrup. Serve immediately!
TIPS:
- Crumble some Bastogne biscuits, Biscotti's or lady fingers on the bottom or between each layer of cream.
- Grate some fresh lemon zest through the strawberry mixture.
