Marinated Strawberries w/ Basil & Mascarpone Cream

Ingredients

NOTE: This recipe is good for two persons.

- 200 g strawberries (sliced)
- 125 gr mascarpone (I used Galbani and stored it in the fridge)
- 100 ml whipped cream
- 3 tbsp icing sugar
- half of vanilla pod (seed scraped out)
- ½ cup sugar (I used light brown sugar)
- ½ cup water
- 4-5 basil leaves (finely chopped)

Instructions

  1. Place the sugar and water in a saucepan and slowly bring to the boil. Stir gently to dissolve the sugar and let the syrup bubble gently for 5 minutes. Then remove the pan from the heat.

  2. Meanwhile, cut the strawberries into slices and the basil into thin strips. Add a few tablespoons of syrup to taste and mix well.

  3. Then mix the whipped cream, mascarpone, icing sugar and vanilla seed in a bowl with a whisk until it is a nice smooth mass and let it set in the fridge for 10 minutes.

  4. After 10 minutes, divide the mascarpone cream between two deep bowls and top with the strawberries and basil in syrup. Serve immediately!

    TIPS:
    - Crumble some Bastogne biscuits, Biscotti's or lady fingers on the bottom or between each layer of cream.
    - Grate some fresh lemon zest through the strawberry mixture.
