Mango Lassi vs. Mango Lassi Popsicles

Indian Summers require Indian drinks!
The weather has been so hot for the past days here in the Netherlands. I’ve read it hasn’t been this hot since 1900 something. I have no idea how people kept themselves cool back in the days. I mean without AC and all of that, I guess the beach was the only place where they could chill. Anyways, before I drift off, we’re lucky now that we have many ways to keep ourselves cool. We have the beach, lots of cooling systems annnnd chilled drinks to enjoy! One of these chilled drinks that keep me cool and full is this Mango Lassi, an Indian mango yoghurt drink. It’s so fruity, creamy and I love to make popsicles with them too.

Mango Lassi or Mango Lassi Popsicles: which one is your favourite?
Mango Lassi vs. Mango Lassi Popsicles
- Prep: 5 minutes
- Total: 4 hours / overnight for Mango Popsicles

Ingredients
NOTE: I divided this Mango Lassi mixture over 1 glass (see photo) and 8 popsicle molds from Silikomart mini. Double the quantity for more portions.
- 1 ½ cup of mango cubes (use a ripe mango)
- 1 cup of yoghurt (I’ve used Optimel Kwark Vanilla flavour, use a vegan variety of you want to veganize this recipe)
- ½ cup of soy (unsweetened) milk or water
- 4 tbsp of organic honey
- ⅛ tsp of cardamom powder
- a pinch of turmeric powder to make the yellow colour pop (this is optional and I mainly did, because though my mango was ripe, it wasn’t as yellow as I wanted the lassi to be)
For the toppings (optional):
- sliced pistachios/almonds
- saffron strands
- rose petals
Instructions
- Mix all the ingredients in a blender.
- Mango Lassi:
If you want a Mango Lassi then store the whole mixture in the fridge for a few hours so it can chill. Stir well before serving.
Mango Lassi Popsicles
If you want a popsicle of your Mango Lassi then store the whole mixture in a popsicle mold and place it in the freezer for a few hours or overnight. My molds are from Silikomart (non spon) are made from silicone which makes them easier to remove. - Add ice cubes to your Mango Lassi. Top your lassi or popsicles with slivers of pistachios/almonds, rose petals, and strands of saffron (optional).
