I’ve enjoyed this mackerel salad in lettuce wraps but it’s just as delicious on whole wheat crackers, a baguette or fresh sour-dough bread.

Mackerel Salad w/ Curry spices in Lettuce Wraps

Ingredients

NOTE: double quantities for more portions

For the mackerel salad:

- 2 cans of mackerel (I’ve used Princes Foods)
- 1 spring onion (chopped)
- 1 tsp curry powder
- ¼ tsp turmeric powder
- ¼ tsp garlic powder
- ¼ tsp Pimento (smoked pepper powder)
- 3 tbsp mayo (I’ve used Hellmann's mayonnaise)
- salt & pepper to taste
- squeeze of lemon juice
- lettuce leaves (I’ve use baby gems)

For the garnish:
- a few radishes
- sprouts
- chives (chopped)
- cucumbers (sliced)
- spring onion (cut finely)

Instructions

  1. Drain the oil from the can and place the mackerel in a bowl. Squeeze a bit of lemon juice over the fish.

  2. Add all of the ingredients - except for the spring onions - for the salad and mix well. To retain some crunch, add the finely chopped spring onions last and mix again.

  3. Put the salad in the fridge (30 to 60 minutes) and serve in the lettuce wraps.

    TIP: you can also have this salad in a bagel or on toast. Top with crunchy veggies, red onions and maybe another cheeky smear of mayonnaise.
