Homemade Flatbread for One Person

A stuffed wrap with rainbow veggies always makes me happy! What about you?
In my recipe I was inspired to create an Eastern version by adding Zaatar spices and Turkish coarse chili flakes. However, feel free to keep it au natural and leave out the spices or just add one of them. The choice is up to you ;-)

Homemade Flatbread for One Person
- Prep: 15 min
- Total: 45 min + proofing
Vegetables
Ingredients
NOTE: this recipe makes 1 flatbread. Double the quantites for more portions.
- ½ cup all-purpose flour (patentbloem)
- ⅛ tsp of Pul Biber (Turkish coarse chili flakes)
- ⅛ tsp of Zaatar spices
- ⅛ tsp garlic powder
- ⅛ tsp black sesame seeds (optional)
- 1 tsp oil
- 4 tbsp of water
- pinch of salt
NOTE: if you want a natural flatbread then leave out the spices except for the salt, oil and water.
For the stuffing:
- 1 small eggplant (of 4 slices, ½ cm thick)
- 3 slices of Halloumi cheese (1 cm thick)
NOTE: I marinated the eggplant slices and Halloumi with 2 tbsp olive oil, ½ tsp garlic powder and black pepper. The Halloumi cheese is quite salty so don’t sprinkle salt on that.
- carrots (finely sliced)
- beets (finely sliced)
- cherry tomatoes
- lettuce leaves
- fresh coriander
- hummus, Harissa yoghurt (3 tbsp Greek yoghurt + ½ or 1 tbsp Harissa)
Instructions
- Knead all the ingredients in a bowl for about 10 minutes until it becomes a soft dough which is sticky but doesn’t stick to your hand.
- Roll it into a ball and drizzle some oil on top. Cover it with a damp cloth and let it sit for 30 minutes in a warm place.
- After 30 minutes roll it out into a round shape. Then place the flatbread in a pan (with or without oil, is your choice) until it’s cooked. This takes about 2 minutes on each side on a medium heat.
- In the meantime grill your eggplant and Halloumi cheese. Set these aside. Then assemble your wrap by adding a smear of hummus / yoghurt harissa and then add your eggplant, Halloumi slices, carrots, beets, tomatoes, lettuce leaves and fresh coriander. Roll it up and serve immediately!
TIP:
- Place the wrap on some baking sheet paper and roll it up. The sheet keeps the roll in shape, your wrap stays fresh and it’s easy to bring to work.
- Use leftover vegetables or meat in this wrap.
- Add tofu, tempeh or soy to veganize this wrap.
