So, we kick off with the Hindustani Chicken Masala, my mother's recipe. A recipe that I eat with a lot of love and of which I have warm memories. The smell, the flavors, and the love with which my mother prepared this dish will be etched in my memory forever and it was also one of the first dishes I made when I started living on my own. Hindustani Chicken Masala (YouTube Video)

Ingredients

NOTE: this recipe serves 2-3 persons.

- 500 gr chicken meat (thighs /chicken breast or vegan chicken pieces)
- 1 onion (minced in a food processor)
- 2 tbsp (sunflower) oil
- 2 garlic (minced in a food processor)
- 2 tsp cumin seeds
- 1 tbsp tomato paste
- 1 ½ cups of water
- piece of Madame Jeanette pepper or keep it whole (note: this is a very spicy pepper)
- salt & pepper to taste or a stock cube (chicken/vegan)

Instructions

 

  1. Cut your chicken (wash it first with some vinegar) into pieces and set it aside. Finely grind your onion, garlic, piece of pepper and cumin in a food processor.

  2. Heat some oil in a pan and fry the onion mixture. After 3-4 minutes, add the masala, tomato puree and salt & pepper or stock cube to taste. Cook for 3-4 minutes or medium heat before adding the chicken. Fry the chicken well.

  3. After about 8-10 minutes, add water and lower the heat. Put a lid on the pan and let it simmer for about 10 minutes. After 7-10 minutes you can turn the heat up a bit to thicken the sauce. Finally, taste the chicken and add some more masala, garlic, or salt if necessary

  4. Serve the Hindustani Chicken w/ Masala with rice, Surinamese roti, or naan.

    TIPS:
    - Add vegetables (long beans) or boiled eggs. First fry the eggs in some oil before adding them.
    - You can also use this spice mix to flavor other vegetables or meat.
