Grilled Brie Toast w/ Garlicky Mushrooms

"The Queen of Cheeses" sure knows how to toast!
For these toasts, I used Brie “The Queen of Cheeses”, because I love the soft and gooeyness of this creamy French cheese. I even enjoy the edible rind (who's with me?)! But if you don’t like Brie, you can definitely substitute it for another cheese like Gruyère, Gouda or basically any cheese that melts well.
The sautéed chestnut mushrooms add an earthy flavour to these toasts and they just go so well with the nutty taste of the Brie. When sautéing the mushrooms, please make sure to salt them after cooking as mushrooms tend to release more liquid when salt is added during the cooking process. I like my mushrooms to have a bite to them, so I cook them for 3 minutes on high heat until they are cooked and nicely browned.

If you like to give this toast an extra kick, sprinkle some chili flakes!

Grilled Brie Toast w/ Garlicky Mushrooms

Ingredients
Note: I’ve used a thick layer of Brie on my toast but you can easily get 3 toasts out of 1 Brie.
Preheat your oven on 210 C/410 F or broiler.
- two or three slices of brown bread
- 1 triangle of Brie (I’ve used the one from Lidl, but Albert Heijn does great Brie’s as well)
- 6 chestnut mushrooms
- a few sprigs of chives
- chili flakes (use as much as you like or leave it out and use black pepper)
- 1 garlic clove
- 1 tbsp of olive oil
- Black Himalaya salt (I’ve used this salt because I liked it for the photo, but please use any type of salt you have at home)
Instructions
- Cut the Brie into slices and divide the pieces over the bread.
- Cut the mushrooms into halfs and then into pieces of 3 or 4 (depending on how big they are) and finely chop the garlic clove.
- Sauté the mushrooms in a pan with some olive oil and garlic for about 3/4 minutes on medium to high heat.
- In the meantime, put the bread with Brie in the oven for about 7/10 minutes on 210 C/410 F. Please check your oven to see when they are done. You can also broil them on high heat for 30 to 45 seconds until the cheese melts.
- When the cheese toasts and the mushrooms are done, it’s time to assemble your toast. Start with putting the mushrooms on top of the toasts and drizzle whatever liquid (this is your "sauce" and contains lots of flavour) there is left in the pan on top of it. Garnish with some salt, chili flakes (optional or use black pepper) and some chopped chives. Enjoy!
