Green Pasta w/ Peas, Spinach & Sausage

Ingredients

- 1 cup (small) pasta (cooked in salted water and olive oil + reserve ¼ cup of pasta water)
- half a cup of fresh peas
- 2 (chicken/vegan/other meat) sausages (broken up and cooked in 1 tbsp olive oil, optional)

For the green sauce:
- half a cup of thawed frozen spinach (squeeze out the excess water)
- half a cup of grated Parmesan cheese
- 100 gr of cream
- ¼ cup of pasta water
- 2 tbsp olive oil
- 2 tsp dried Italian herbs
- 1 tsp garlic paste or 1 garlic clove
- salt & pepper to taste
- blender to mix

N.B. Use a bit of pasta water to loosen up the sauce

For garnish
:
- extra Parmesan cheese
- olive oil
- basil leaves

Instructions

  1. Cook your pasta according to the package instructions. I also add sea salt and olive oil to the cooking water. After cooking reseve ¼ cup.

  2. Add the peas, Parmesan cheese, cream, pasta water, olive oil, Italian herbs, garlic to.a blender. Blend until smooth and season with salt & pepper to taste.

  3. In a pan cook the sausages (remove skin and break them up) in bit of olive oil until crispy and cooked through. Add the pasta followed by the sauce and cook until the sauce is thick enough (3-5 minutes on medium heat). Stir well and then turn of the heat. Serve with extra Parmesan cheese, a drizzle of olive oil and garnish with basil leaves.

    TIP:
    - You can also add grilled green asparagus or zucchini to this dish.
