Last year, I attended the Boerderij Chips event which was organized by Deb’s Bakery & Kitchen. I got to know the company and farmer and co-owner Henk (a Richard Gere look-a-like). He showed us around the farm, drove us in his “cabrio” and most importantly told us about the story behind these crisps. His neighbor and himself are turning locally grown potatoes into a sustainable and delicious product and I saw it with my own eyes.

Below you can spot me in a potato field. Now, how often can you say that? ;-)

I had a wonderful time that day and truly fell in love with the farm, the potato field and this honest crisp. As If that wasn’t enough, we also had to create a delicious dip to go with these yummy crisps. Helena from Eating Habits and I won the best dip and went home with a very cool price. My recipe was a Fiery Dip which was flavoured with spices and of course Madame Jeanette pepper. The dip is packed with warm spices, garlic, onion and has a smoky hint due to the Pimenton. I love to eat this dip with crisps, but by all means dunk your fries, veggies or even chicken strips in it. And if you totally want to dip in style, then try out my Plantain Chips  with this fiery dip. Either way, enjoy!

Fiery Dip w/ Madame Jeanette Pepper

Ingredients

- 4 tbsp mayonnaise, preferably Hellmann’s
- 2 tbsp sour cream
- 1 clove of garlic (minced)
- 1 tbsp white onion (finely chopped)
- 1 tbsp curry powder (I used Chan’s)
- 1 tsp smoked paprika, Pimenton
- 1 tbsp yellow Madame Jeanette pepper (minced)
- 1 to 2 tbsp lemon juice
- 2 sprigs of parsley
- salt to taste
- 1 tsp turmeric powder for color (optional)

Instructions

  1. Grind the garlic, onion, Madame Jeanette pepper and parsley in a food processor with some the lemon juice.

  2. Put this in a bowl and mix well with the rest of the ingredients.

  3. Season the dip with some salt.

    Tip:
    - You can spice up your dip by adding more pepper. If this predominates, add more lemon juice, mayo / cream. Delicious with Farm Chips sea salt ripple.
