Easy Tantamen Ramen Noodles

Ingredients

NOTE: This recipe serves 1-2 persons

- 1 package of ramen noodles
- 200 ml soy milk
- 100 ml water
- 1 chicken stock cube (about 1 tbsp of powder)
- 1 baby bok choy (steamed)
- 1 chicken breast or 150 gr of chicken mince (see below)

N.B: I used chicken but the original recipe uses pork.

For the chicken:
- 150 gr chicken mince or finely chopped chicken
- 1 tbsp soy sauce
- 1 tsp garlic (minced)
- 1 tsp rice wine vinegar
- 1 tsp chili oil
- 1 tbsp olive oil

For the sesame paste:

- 1 tbsp Tahin paste
- ½ tbsp soy sauce
- ½ tbsp chili oil

For Garnish:
- 1 spring onion (finely chopped)
- 1 soft boiled egg
- chili oil
- black sesame seeds

Instructions

  1. Prepare your chicken by finely chopping it when you use chicken breast. Then season your chicken with all the spices and cook it in a pan on medium heat until the chicken is done. Set this aside.

  2. Then steam your baby bok choy and set this aside and make the broth in the meantime by placing the soy milk, water, chicken stock cube in a deep pot and letting it simmer on low heat. Stir every now and then.

  3. Then prep your sauce by placing all the ingredients in a bowl and whisking it really well. Set this aside.

  4. Then cook your ramen noodles according to the package instructions and set them

  5. When you’ve prepped all your ingredients it’s time to assemble the Tantanmen Ramen Add 1 tbsp or 2 (depending on sesame and spicy you like it) to a bowl and pour a ¼ cup broth on it. Stir well and then add your noodles and steamed baby bok choy to the bowl. Then pour more broth and garnish with a soft boiled egg, spring onions, black sesame seeds and a drizzle of chilli oil (optional).
