Whenever I’m in need of a quick recipe, I don’t mind reaching out to store-bought items from the supermarket. Sure, making everything from scratch is wonderful, utterly delicious and artisan, it can however be time consuming. And sometimes I just don’t have the time nor the patience but a stomach that’s craving some tasty food. So, as for my store-bought items, pizza dough and curry pastes are the ones I use a lot at home. 

This recipe was made with store-bought pizza dough, marinated soy pieces, white and yellow cheddar cheese and Boursin (an herbed cream cheese) as a base. Trust me this was baked, cheesy, meatless heaven!

Easy Peasy Buffalo Soy Pizza (Vegetarian)

  • Prep: 10 min (minus soaking time)
  • Total: 30 min

  • Vegetables

Ingredients

- 3 mini store-bought pizza bottoms (I used Jan’s)
- ½ cup Valle Del Sole - Soy Pieces (soaked in 1 cup cooked in a kettle water, squeezed out) or ready made soy pieces from the store
- 3 tbsp of my Buffalo Sauce (use as much as you can handle)
- 3 tbsp of a herbed cream cheese (I used Boursin)
- 1 Mozzarella cheese
- ½ cup of cheddar cheese (grated)
- ½red onion (cut into slices)
- Tabasco (optional)
- 1 tbsp parsley (finely chopped)
- salt & pepper to taste

Instructions

  1. Soak the soy pieces in boiled water for 30 minutes. Let them cool down and then squeeze out all the excess water.

  2. Add the soy pieces to a bowl and marinate with the Buffalo Sauce.

  3. Then prepare your pizza station and smear a layer of Boursin on each pizza bottom. Then top with the Mozzarella cheese, the marinated soy pieces, red onion and an extra sprinkle of cheddar cheese.

  4. Bake the pizza according to the package instructions and garnish with parsley and tabasco (optional).

    TIP:
    - Buffalo Sauce is a spicy sauce, but you can make it a tad bit milder with some ketchup.
    - You can also use naan or any other flatbread as your “pizza” bottom.
