When I made this Granola in the pan, I got inspired by two other foodie friends of mine and their Granola & Chia Parfaits. It looked so good that I wanted to make Granola that was done in minutes and not wait.

The Granola in pan saves you time and is an instant satisfaction for those breakfast lovers. Try it out and add whatever nuts or dried fruits you have. The basics are simple, the method is easy, and the result is delicious!

Ingredients

NOTE: this recipe serves about 4 portions.

- ¾ cup oats (old fashioned)
- 1 tbsp butter
- 2 tbsp honey
- cinnamon (optional and add as much or little as you like)
- pinch of salt
- a handful of dried cranberries
- a handful of coconut sliver

(You can also add nuts such as, almonds, walnuts, hazelnuts. Dried fruits like dates, prunes, raisins, apricots. As for seeds: pumpkin, sunflower and chia is nice.)

For the Granola bowl:
- vanilla yoghurt
- chia pudding (2 tbsp + ¼ cup soymilk) and let this sit overnight)
- granola
- fresh strawberries

Instructions

  1. Place a (non-stick) skillet/pan on the stove and turn on the heat (medium).

  2. Add the butter and let it melt.

  3. Then add the granola and cook this until it becomes golden brown (not fully toasted, about 3 minutes). Mix well in the meantime.

  4. Add the honey and make sure it coats all of the oats. Keep stirring and when the honey is evaporated, add your cranberries and coconut slivers (about 3 minutes).

    NOTE: if you use any whole nuts like almonds or walnuts etc. do add them when you add your oats to the pan.

  5. Then toss and turn once more until the coconut slivers are toasted and the cranberries look plump. Turn off the heat and let the granola cool down on a baking sheet paper. When the granola is completely cooled down you can transfer it to a jar.
