Croque Madame Croffle (Croissant + Waffle)

Try out this Korean foodtrend: Croffles!
After Dalgona gate (another foodtrend of 2020), I hopped on the “Croffle” trend and present you my Croque Madame Croffle. A delicous croissant which is first smeared with a layer of Dijon mustard and stuffed with Turkey ham and cheese. After it has had its waffle time, it is then topped with more cheese and a fried sunny side up.
It’s a super easy (if you buy store-bought croissant dough) breakfast, very tasty and am sure it will place a crowd! Also check out my TIPS on how to make many Croffle varieties ;-)

Ingredients
NOTE: This recipe is good for 3 persons.
- 1 can of store-bought croissants (6 pieces)
- 6 slices of (Turkey) ham
- 9 slices of cheese (Gouda, matured cheese)
- Dijon mustard
- 3 eggs + oil/butter for frying
- dried parsley (optional)
- salt & pepper to taste
- waffle maker
Instructions
- Remove the croissant dough from the can and spread it out. Then smear a layer of Dijon mustard and stuff them with ham and cheese. Finally, roll the croissant.
- Pop them in the waffle maker until the dough is cooked and both sides are golden brown (about 4 minutes).
- In the meantime, fry the eggs and keep them in a pan so they can stay warm. Don’t cover with the lid otherwise the yolk will get cooked through (unless that’s what you like).
- When all six croffles are done, place 1 slice of cheese on top of 2 croffles. Pop them in the microwave for 10 second or put them under the grill of your oven. When the cheese is melted top it with the fried egg, garnish with dried parsley and season with salt & pepper. Enjoy!
TIPS:
- Strawberry Cheesecake Croffle: stuff your croissant with cream cheese, jam and cookie crumbles.
- Nutella lover: stuff your croissant with Nutella and some toasted + crushed hazelnuts.
- Keep it simple and garnish with whip cream and maple syrup.
