Cod Fish w/ Garlic Parmesan Crust

Ingredients
NOTE: this recipe is good for two persons
- 2 filets of Cod Fish (about 260 gr)
- 1 tbsp butter (room temperature)
- 1 ½ tbsp of Hellmann’s mayonnaise
- ¼ cup Parmesan Cheese (grated)
- 1 spring onion chopped
- 2 tsp garlic powder or 2 garlic cloves (minced)
- 1 tbsp of olive oil
- dash of chili powder (optional)
- squeeze of lemon juice
- 2 tbsp cup Panko breadcrumbs
- salt & pepper to taste
For garnish:
- extra lemon wedges
- extra spring onion (finely chopped)
Instructions
- Preheat your oven to 220 C or 400 F.
- Then coat an (heatproof) oven dish with 1 tbsp of olive oil. Place your two pieces of cod fish in it and make sure both sides are gently coated with the oil. Then finally squeeze a bit of lemon juice over it. Cook the fish for 6-8 minutes and then remove it from the oven but leave the oven on.
NOTE: depending on your oven the cooking time can differ. - In the meantime, prepare your topping. Mix the butter, mayonnaise, chopped spring onion, garlic + chili powder in a bowl. Then divide it over the cod fish pieces and sprinkle some Panko breadcrumbs (this is optional) on top.
- Then cook the fish again for 6-8 minutes on 220 C or 400 F and remove it when the topping is broiling and crispy. Sprinkle some chopped spring onion and set it aside for a few minutes before your serve it. Make sure not to burn yourself and enjoy!
