When it comes to sweet breakfasts, I’d prefer anything waffle, pancake or croissant. It’s probably that buttery dough that I really REALLY love.  For this croffle, I wanted to recreate a Cinnamon Bun with a coffee flavor. So, I mixed my favorite coffee powder (Chikko Not Coffee, non spon) with cinnamon and butter. Then I smeared it on the inside of the store-bought croissant pastry and rolled it up. After that, I let the waffle maker do the work - really, it’s that easy ;-)

A super quick and sweet breakfast is coming your way!

Cinnamon Coffee Croffles

  • Prep: 10 min
  • Total: 25 min

  • Vegetables

Ingredients

NOTE: this recipe makes 6 croffles.

- 1 pack of store-bought croissant pastry (I used Danerolles)
- 2 tbsp light brown sugar (I used Van Gilse)
- 2 tbsp softed butter (unsalted)
- 1 tsp instant coffee powder (I used Chikko not coffee, leave out if you want a regular cinnamon flavor)
- 1 tsp cinnamon
- waffle iron

For the glaze:
- 2 tbsp Greek or vegan yoghurt
- 1 tbsp powdered sugar
- a few drops of vanilla essence or use a vanilla bean paste

Instructions

  1. In a bowl add the cinnamon, coffee powder and softened butter. Mix it to a paste.

  2. Then spread a layer of butter on the croissant and roll it up.

  3. Place the croffles in a waffle iron and keep it in there for a few minutes. Mine took about 2-3 minutes.

  4. Make the glaze and spread it on the Cinnamon Coffee Croffle. Sprinkle some extra cinnamon for flava and enjoy!
