Bucatini w/ Smoked Salmon & Mini Pomodori’s

I personally believe that the best meals come together when you just use your creativity and have fun in the kitchen! Pasta is great for these adventures. With a few ingredients you can have a complete and wholesome meal. Hope you give this recipe a go!

Bucatini w/ Smoked Salmon & Mini Pomodori’s

Ingredients

- 2 portions of cooked Bucatini or whatever pasta you prefer (save ¼ cup of pasta water)
- 150 smoked salmon- 2 tbsp olive oil
- 1 tbsp of butter
- 3 cloves of garlic (finely sliced)- 1 shallot (finely sliced)- 1 tbsp of tomato paste
- 8 mini Pomodori’s (cut 4 in halve and keep the rest whole)- 1 tbsp Italian herbs (dried or fresh, mine were with chili flakes)- ½ tbsp Pimenton (smoked pepper powder)- ¼ cup Parmesan cheese (grated and extra for serving, optional)- salt & pepper to taste (smoked salmon can be quite salty so use a little)
For garnish:
- extra Parmesan cheese
- fresh Basil leaves

Instructions

1. Cook your Bucatini or your favorite pasta and set it aside.

2. Then add oil to a pan and lightly cook your finely sliced garlic, shallot with the Pomodori’s for about 3 minutes on medium heat. Season with salt & pepper to taste.

3. After 3 minutes add your Pimenton. You’ll noticed that after another 3 minutes it will go hard, and you can your pasta water. Let the sauce simmer for 3 minutes on low heat and put the lid on.

4.Then remove the lid and add your smoked salmon and Italian herbs. Mix well before you add your pasta. Makes sure the pasta is covered in the sauce and then add your Parmesan cheese. Finish it off with some fresh Basil and enjoy immediately!

TIPS:- Add fresh chili’s for that extra kick!- Add ¼ cup of cream to turn it into a creamy pasta.
