Easy peasy breakfast pizza to start your day!

When I made this breakfast pizza I was inspired by the smoked salmon and cream cheese bagel. It''s one of my favourite bagels. It makes a great breakfast or brunch offering. However, I was bagel-less at home and the only bread I had around was the Israeli (thin) flatbread. I simply heated the bread until it became crispy, let it cool off and smeared a thick layer of Boursin (cream cheese with herbs and garlic) and topped it with the rest of the ingredients.

Like most of my recipes you can play around with flavours and ingredients. So feel free to substitute the raw ingredients for crunchy alternatives or even veganize it. Though, do make sure to use Boursin or another type of cream cheese (vegan, with or without herbs), since the cream cheese layer prevents the thin dough from getting too soggy when e.g. adding tomatoes.

This breakfast pizza makes an easy morning meal but you can also have this for lunch or as an appetizer for when you have guest coming over. Do prepare this on the day itself.

Breakfast “Pizza” w/ Smoked Salmon and Cream Cheese

Ingredients

- 1 Israeli bread (You can buy this at a Moroccan or Israeli store)
- Boursin or any type of herb cream cheese
- smoked salmon (I got my pieces from the Polish Supermarket Groszek in the Hague but regular smoked salmon is also fine!)
- avocado slices
- red onion slices (softened in a little bit of vinegar)
- cucumber
- capers (as much as you like)
- cherry tomatoes

Garnish
- chives
- parsley
- black pepper / chili flakes (optional)
- black sesame seeds optional

Instructions

  1. Heat up your Israeli bread in a pan on medium heat.

  2. Smear a good layer of Boursin on your bread.

  3. Top the Israëli bread with all the ingredients. I started with my avocado rose (you can do chunks or slices), smoked salmon pieces, cucumber, red onion slices (I softened these in a little bit of vinegar) -and cherry tomatoes slices. Garnish with some chives, parsley and chili flakes (optional).
