I actually made my go-to one bowl Banana Bread recipe a bit healthier when I was at my parents’ house so my dad could enjoy an extra slice. We all (my neighbors too) enjoyed it a lot, so I had to share it with you all.

Fun fact: my dad also helped me with this shoot and held the Aloe Vera plant. Him, my mom and younger brother were always supporting me with my shoots when I used to live there. Most of the time they didn’t know that they were going to help me out, but I am happy they did, because without their support this would’ve been a different Spiced Chickpea.

This Banana Bread w/ Dates & Coconut Sugar will rock you!

As for this delicious and moist Banana Bread w/ Dates & Coconut Sugar, I’m using semi-ripe bananas, because I don’t like those overly sweet bananas in my bread. And I also add coconut sugar for a "caramelly" flavor and dates for a “toffee” bite. This bread or cake will seriously rock you! It’s easy, spiced and you can enjoy it with your family or store it in your freezer and take it out whenever you’re in need of something sweet ;-)

Banana Bread w/ Dates & Coconut Sugar

Ingredients

- 3 semi-ripe bananas (smashed with a fork)
- 1 ½ cupsof  all purpose flour
- 76 gr butter (melted)
- ¾ cup coconut sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp cinnamon
- ⅛ tsp salt
- handful of walnuts (chopped)
- 4-6 dates (chopped)

NOTE: toss the dates and walnuts in 1 tbsp of flour. This will prevent them from sinking to the bottom of the loaf pan when baking.

Instructions

  1. Preheat your oven to 176 C or 350 F. Then lightly grease and cover a loaf pan (8.5 x 4.5-inch) with butter and baking sheet.

  2. In a large bowl, smash the banana’s and add the melted butter, coconut sugar, egg and vanilla. Mix well with wooden spoon.

  3. Then sprinkle the baking soda, baking powder, cinnamon, and salt over the flour and mix well. Then add the flour to the banana mixture and combine well.

  4. Add 1 tbsp of flour to the chopped walnuts and dates before your toss them through the banana cake batter. Stir well and then pour the batter into the greased lined loaf pan.

  5. Bake for 40-50 minutes (depending on your oven). Check the cake by inserting a skewer in the center of the loaf. If it comes out clean, then your Banana Bread is cooked! Remove the cake from the oven and place it on a rack or on your stove. Let it chill in the pan for about 10-15 minutes. Then turn it out onto a cake or wired rack. Let it cool completely before you slice it. 

    TIPS:
    - Add chocolate chips, caramel chunks or even other dried fruits to vary with this Banana Bread.
    - You can store individual slices in your freezer and let it thaw before your eat it.
