Creamy Spinach Pasta w/ Garlic & Burrata

Whenever I buy a bag of spinach leaves, it reminds me of Popeye and him lecturing us to eat our spinach. You must understand that after seeing this cartoon, Mom would also give us a lecture on eating our veggies: “You wanna be as strong as Popey?” She knew I never liked spinach...hahah So, most of the time I just swallowed it so I didn’t have to taste it. Fast forward to now, I learned to eat it, appreciate the texture and actually enjoy it in a salad the most. But if I cook it, it goes in a pasta or Indian dal. This time I’m sharing my Creamy Spinach Pasta w/ Garlic & Burrata The richness of the sauce goes well with these wilted green leaves and actually balances out the creamy sauce. Steamed Pak Choi w/ Asian Spices

Pak Choi is a traditional Asian ingredient. The tender dark leafy green and crispy white stalk comes from the cabbage family and is great as a side dish when serving an Asian style meal. Vegan “Steak”

I’ve never had steak in my life. So, when I decided to make myself a Puerto Rican Jibarito sandwich during the meat free week, I wanted to recreate a “steak” with soy cubes and black beans that I’d lingering in my pantry. Now, I know this not the real deal, but I must say this vegan or mock steak turned out amazing! With the right seasoning and texture this is a great substitute. Plus, this Vegan “Steak” can be used as burger or as meatballs too!
