3x Dips w/ Anchovies

These dips were made with the canned goods of Princes Foods.
The most loved version of this fish is fried. Who can say no to fried anything, right? However, if you can’t find them fresh you are still not at a loss. Canned anchovies are packed with bold flavours and often used in sauces, pastas or even soups.
I’ve used canned anchovies as an inspiration for a snack platter and I’ve come up with 3x dip recipes with anchovies. Get ready for this!

Anchovies Garlic Mayo

This Anchovies Mayo has a salty and garlicky taste. It’s perfect as a dip for crudité, to spread on a sandwich or wrap, or even as a condiment.
Anchovies Herb Butter

Fresh herb butters are delicious to toss through vegetables, bake with fish, melt on your steak or stir through pasta, but they also work oh so well as a spread for your crusty bread on a snack platter.
Anchovies Olive Oil

An additional flavour on your snack platter; plus, easy on the wallet is this anchovies flavoured olive oil dip. I’m a big fan of homemade infused oils and this salty and aromatic olive oil fits perfectly on a snack platter. Just make sure you use a good olive oil.

Ingredients
NOTE: double quantities for more portions
Ingredients for the Anchovies Garlic Mayo:
- 4 ½ tbsp mayo (I’ve used Hellmann's mayonnaise)
2 anchovies (I’ve used Princes Foods)
- half a garlic clove (chopped/minced)
- black pepper to taste
- squeeze of lemon juice
Ingredients for the Anchovies Herb Butter:
125 gr unsalted butter at room temp
- 4 anchovies (I’ve used Princes Foods)
- 1 tbsp parsley (curly kind)
- 1 tbsp chives
- 1 tbsp white part of a spring onion
- ¼ tsp chili flakes (optional/substitute for black pepper)
- ½ or 1 garlic clove (depending on how garlicky you want this butter to taste)
Ingredients for the Anchovies Olive Oil:
- 4 tbsp of good olive oil
- 1 or 2 anchovies (I’ve used Princes Foods)
- half a garlic clove (finely sliced)
- chili flakes or black pepper to taste
Instructions
Instructions for the Anchovies Garlic Mayo:
Spoon the mayo into a bowl and chop the anchovies and garlic finely. Add the rest of the ingredients and mix well. Taste the mayo and gradually add salt & pepper to taste.
TIP: to make this mayo a tad bit healthier, simply replace half of the mayo with a low-fat yoghurt.

Instructions for the Anchovies Herb Butter:
Place the butter in a bowl and finely chop the herbs, garlic and anchovies. Mix well and add the chili flakes. Taste the butter and add salt or more anchovies to your preference.
TIP: if you want to store the butter in your fridge, then place the butter on clingfilm and roll it up into a sausage.
Instructions for the Anchovies Olive Oil:
Place all the ingredients in a bowl and mix well without breaking the anchovies.
TIP: make this oil a day ahead so the ingredients can infuse the oil more effectively.
