10X Work-From-Home Lunch Ideas!

I hope my simple dishes and lunches can help you take a nourishing break from your work. Some require a bit more work, but nevertheless they will leave you satisfying. I wonder which lunch will be your mid-day meal ;-)
1. Copycat Egg McMuffin
This one is originally served as breakfast at the big M, but since I don’t really do breakfasts, I prefer to eat these Copycat Egg McMuffins in the afternoon. My version is made with real cheddar cheese, organic eggs, a tasty Turkey slice and served on some toasted buns. Can I tempt you to go to the homemade fast-food side?
2. Homemade Flatbread for One Person
Wraps for lunch are always a good idea! But often I end up using 2 sheets and the rest of them lingers in my fridge for days until it becomes a biology project... Solution: just make one flatbread yourself (duhhh)! With this recipe there’s no waste and you can add your fave grilled veggies, Halloumi, meats or whatever you prefer. Try it out!
3. Tortilla Baby!
Spanish omelets are just a good meal any time a day! They are so versatile, easy to make and you can serve them hot or cold, with or without a salsa or aioli. I like mine in a baguette, with a generous smear of aioli and some lettuce leaves. How will you eat yours?

4. Lebanese Quesedilla’s
Since we can’t travel as much as we want anymore, why not bring these vibes to our lunches. With these Lebanese Quesedilla’s, it’s as if you’re in an Eastern country, because these are soul satisfyingly good! Made with 3 types of cheeses, Zaatar oil and delicious Lebanese bread - you just know you’re in a for treat!
5. Grilled Brie Sandwich w/ Smoked Chicken
Back in my student days, I used to eat this sandwich a lot at a cute little place in Leiden, my Alma Mater. It was such a new thing to me: a grilled Brie cheese sandwich with smoked chicken, onions and pine nuts. I couldn't imagine that so many years later I'd still eat this. It's that good and done in minutes!
6. Korean Pancakes w/ Shrimp
Pancakes for lunch? Why not? If you have some leftover veggies lingering in your fridge then you should definitely make these Korean Pancakes! With or without seafood, the flavours are bang on and served with my Asian Dipping Sauce you have a winning lunch you can make your colleagues jealous with ;-)

7. Truffle Egg Salad
This dead simple egg salad is so good and with a touch of truffle oil (or slices of real truffle if you’re that fancy ;-)) you have a delicious and luxurious salad. You can serve it in a wrap, on top of a salad or on some toasted bread.
8. Turkish Eggs on Toast
Let’s go on another trip. Next stop: Turkey! But first, let's get to the bottom of this for those of you who have never heard of it before, but love to try out new eggy meals. Turkish eggs are basically poached eggs on top of some silky-smooth thick yoghurt and finished off with a hot spiced garlicky, peppery and buttery oil. It's a perfect pick me up food for when you are low on energy and need to re-energize. Make them soon!
9. Smoked Salmon & Herb Tamagoyaki
Try out this delicious Smoked Salmon & Herb Tamagoyaki for breakfast or lunch! It’s filled with juicy pieces of smoked salmon and fresh herbs such as, dill, parsley and chives. Plus, you can easily play with these ingredients and whip up your own version too!
10. Grilled Cheese Sandwich w/ Chicken Taco Meat
