Xmas Dinner for 2!

So, this year I wanted to come up with a million recipes for your Christmas dinner. Unfortunately, a lot happened and with lockdown No.3 whilst dealing with other stuff, I didn’t have time to work on as many recipes as I wanted. However, I did make a Christmas dinner for two (greedy persons ;-) consisting of a Chicken Roll stuffed with Cranberry Compote & Brie, Sweet Potato and Garlic Galette and Roasted Purple Brussel Sprouts. I shared this lovely meal with my two neighbours, who have become my good friends during this Pandemic. I guess, that’s the bright side of this whole drama; that we get to connect and reconnect with others and ourselves.

Roasted (Purple) Brussel Sprouts

I know sprouts have a bad name in the Netherlands and that’s probably because they were cooked through until they became snotty and unappealing. I’ve never really hated them because my mom either stir-fried or tossed them through a curry. They were really flavoursome! But you can do more with these mini cabbages by roasting them in the oven. This way they will become crispy and super yum! But first we will season them before we'll pop them in the oven. And after that, we will coat them in a marinade of honey and balsamic vinegar. Trust me you would want to try out these sprouts!
